Ingredients:
1 cup tur dal (pigeon pea lentil)
1/2 cup chana dal (chickpea lentil)
1/4 cup urad dal (husked black gram)
1 tablespoon sambar powder
1 teaspoon mustard seeds
1 teaspoon cumin seeds
1 pinch asafoetida (hing)
1 dried red chili, broken
1 sprig curry leaves
1/4 teaspoon turmeric powder
Salt to taste
3 cups water
1 large onion, chopped
2 carrots, chopped
1 potato, cubed
1/4 cup drumstick pieces
1/4 cup pumpkin, cubed
Chopped coriander leaves for garnish

Instructions:

  1. Cook the dals: Rinse the dals and cook them in a pressure cooker with 3 cups of water for 3-4 whistles. Let it cool naturally.
  2. Prepare the tempering: Heat oil in a tempering pan. Add mustard seeds, cumin seeds, asafoetida, dried red chili, and curry leaves. Let them crackle.
  3. Sauté vegetables: Add the chopped onion, carrots, potato, drumstick pieces, and pumpkin to the tempering. Sauté until softened.
  4. Combine ingredients: Add the cooked dals, turmeric powder, sambar powder, and salt to the sautéed vegetables.
  5. Simmer and adjust: Bring to a simmer and cook for 5-7 minutes, or until the flavors blend. Adjust the consistency with water if needed.
