Ingredients:
- 500 grams crushed or grated jaggery (gud/gur)
- 1 tablespoon onion seeds (kalonji)
- 2 tablespoons fennel seeds (saunf)
- 1 tablespoon sesame seeds (til)
- 2 tablespoons desiccated coconut
- 1 tablespoon coriander seeds (akha dhaniya)
- 1 teaspoon black pepper (kali mirch)
- 15 pieces almonds (badam), chopped
- 5-6 green cardamom pods (hari elaichi)
- 1.5 tablespoons dry ginger powder
- 2 tablespoons ghee
Preparation:
- Prepare a Plate: Grease a plate or a square dish and set it aside.
- Dry Roast Spices: On low heat, dry roast all ingredients except the ginger powder until aromatic. Set aside to cool slightly.
- Crush Spices and Nuts: Lightly crush black pepper, green cardamom, and coriander seeds in a mortar and pestle. Chop the almonds into small pieces.
- Melt Jaggery: In a heavy-bottomed pan, add ghee on low to medium heat. Once melted, add crushed or grated jaggery. Stir occasionally to prevent sticking, and let the jaggery fully melt.
- Combine Ingredients: Add ginger powder and mix well into the melted jaggery. Then add all roasted ingredients and stir to combine evenly.
- Set and Shape: Pour the mixture onto the greased plate and spread it with a spoon or spatula to form an even layer. Let it cool slightly, then cut into desired shapes while warm, as it hardens when cooled.
- Store: Allow it to cool completely before storing in an airtight container.
